Buttermilk Donut Fries with Maple Glaze
Ingredients:
1 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup granulated sugar
1/4 cup vegetable oil, plus extra for frying
Vegetable oil for frying
Powdered sugar, for dusting (optional)
Maple Glaze:
1 cup powdered sugar
2-4 tablespoons maple syrup
1-2 tablespoons milk or cream
Instructions:
1. In a large bowl, whisk together buttermilk, eggs, and vanilla extract. Set aside.
2. In a separate large bowl, whisk together flour, baking powder, baking soda, salt, and granulated sugar.
3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. The batter will be slightly lumpy.
4. Gently fold in 1/4 cup of vegetable oil into the batter.
5. Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C). Use a candy thermometer to monitor the temperature.
6. Drop spoonfuls of batter (about 2 tablespoons each) into the hot oil, ensuring not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and cooked through.
7. Remove the fried donut fries from the oil and place them on a wire rack to drain excess oil.
8. While the donut fries are still warm, dust them lightly with powdered sugar (optional).
9. Make the Maple Glaze: In a small bowl, whisk together powdered sugar, maple syrup, and milk or cream until smooth. Add more maple syrup or milk as needed to reach your desired consistency. It should be pourable but not too runny.
10. Drizzle the maple glaze over the warm donut fries and serve immediately. Enjoy!
