Butterscotch Heaven Pie
A rich, creamy butterscotch filling with a buttery graham cracker crust, topped with whipped cream and optional garnish.
Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
⅓ cup unsalted butter, melted
For the Filling:
¾ cup packed dark brown sugar
¼ cup cornstarch
¼ teaspoon salt
2 ½ cups whole milk
4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the Topping (Optional):
1 cup heavy whipping cream
2 tablespoons powdered sugar
½ teaspoon vanilla extract
Shaved chocolate or butterscotch chips (for garnish)
Instructions
Make the Crust
Preheat the oven to 350°F (175°C).
In a medium bowl, combine graham cracker crumbs and granulated sugar. Add the melted butter and stir until the crumbs are evenly moistened.
Press the mixture into the bottom and up the sides of a 9-inch pie plate. Use the bottom of a measuring cup to create an even crust.
Bake for 8-10 minutes, or until lightly golden and fragrant.
Let the crust cool completely while you prepare the filling.
Make the Filling
In a medium saucepan, whisk together the brown sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.
Place the saucepan over medium heat, stirring constantly, until the mixture comes to a simmer and thickens. Continue to cook and stir for 1-2 minutes more.
In a separate bowl, whisk the egg yolks until slightly pale. Slowly whisk about ½ cup of the hot milk mixture into the egg yolks to temper them.
Pour the egg yolk mixture back into the saucepan with the remaining milk mixture.
Cook over medium-low heat, stirring constantly, until the filling thickens and coats the back of a spoon (2-3 minutes). Do not allow it to boil.
Remove from heat and stir in the butter and vanilla extract until smooth.
Assemble the Pie
Pour the warm butterscotch filling into the cooled graham cracker crust.
Press a piece of plastic wrap directly onto the surface of the filling to prevent a skin from forming.
Refrigerate for at least 4 hours, or preferably overnight, to allow the filling to set completely.
Make the Topping (Optional)
Just before serving, beat the heavy whipping cream in a chilled bowl until soft peaks form.
Add powdered sugar and vanilla extract, and continue beating until stiff peaks form.
Spread the whipped cream evenly over the chilled pie.
Garnish with shaved chocolate or butterscotch chips, if desired.
