Creamy Garlic and Tomato Gnocchi π§π
Soft, pillowy gnocchi coated in a rich, creamy garlic sauce with roasted cherry tomatoes and fresh basilβthis dish is pure comfort food! Perfect for a cosy dinner at home.
Ingredients:
π₯ For the Gnocchi:
500g potatoes, boiled and mashed
150g plain flour, plus extra for dusting
1 egg, beaten
Β½ tsp salt
π§ For the Sauce:
1 tbsp olive oil
3 cloves garlic, minced
200ml double cream
50g parmesan cheese, grated
150g cherry tomatoes, halved
1 tsp dried oregano
Salt & black pepper, to taste
Handful of fresh basil, chopped
Method:
1οΈβ£ Make the Gnocchi:
π₯ Boil the potatoes until soft, then mash them until smooth. Let them cool slightly.
π³ On a floured surface, mix the mashed potatoes with flour, egg, and salt to form a soft dough.
πͺ Divide into four sections, roll each into a rope, and cut into small bite-sized pieces. Use a fork to create ridges for texture.
π₯ Bring a pot of salted water to the boil and cook the gnocchi until they float (about 2 minutes). Drain and set aside.

Heat olive oil in a pan over medium heat and add cherry tomatoes. Cook until soft.
π§ Stir in minced garlic and oregano, cooking for another minute.
π₯ Pour in double cream and let it simmer for a couple of minutes before adding parmesan cheese. Stir until smooth.
πΏ Season with salt and black pepper, then toss in the cooked gnocchi. Coat well in the sauce.
