Beef Tomato Macaroni Soup
Hearty Beef and Tomato Macaroni Soup
Ingredients:
1 pound ground beef 🥩
1 small onion, chopped 🧅
2 cloves garlic, minced 🧄
4 cups beef broth 🥣
1 can (15 oz) diced tomatoes 🍅
1 can (15 oz) tomato sauce 🍅
2 medium carrots, chopped 🥕
2 stalks celery, chopped 🌿
1 teaspoon Italian seasoning 🌿
Salt and pepper to taste 🧂
1 cup elbow macaroni 🍝
1 tablespoon olive oil 🛢️
Fresh parsley for garnish (optional) 🌿
Directions:
1. Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
2. Add the chopped onion and garlic to the pot and cook for 2-3 minutes until softened.
3. Stir in the beef broth, diced tomatoes, tomato sauce, carrots, celery, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to a simmer. Cook for 20 minutes or until the vegetables are tender.
4. While the soup is simmering, cook the elbow macaroni according to package instructions. Drain and set aside.
5. Stir the cooked macaroni into the soup and cook for another 5 minutes.
6. Garnish with fresh parsley if desired, and serve hot.
