Baked Whole Halloumi with Apricots and Honey

1 block halloumi (225g/8oz)
6 apricots (or 1 small can, drained)
1.5 tablespoons olive oil
1 tablespoon harissa paste
1 tablespoon honey
1 tablespoon lemon juice
1 scallion (spring onion), sliced thinly
1 tablespoon thyme leaves
Directions:
1. Preheat the oven to 200°C/390°F. Slice apricots and place them in an oven dish with ½ tablespoon olive oil. Bake for 10 minutes.
2. Make diagonal cuts on the halloumi block and place it in the center of the apricots. Drizzle with olive oil.
3. Set the oven to grill (broil) at 250°C/480°F and bake for 10 minutes until the halloumi is golden and charred.
4. Mix harissa, honey, and lemon juice in a small bowl. Drizzle over the halloumi and apricots. Garnish with thyme and scallions.
5. Serve immediately.
