Slow Cooker Beef Stroganoff Potato Casserole
Ingredients:
- 1 lb beef stew meat
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup sour cream
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp paprika
- 1 lb baby potatoes, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. In a slow cooker, add the beef stew meat, onion, garlic, beef broth, sour cream, Worcestershire sauce, Dijon mustard, and paprika. Stir well to combine.
2. Add the chopped baby potatoes and season with salt and pepper.
3. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
4. Serve the beef stroganoff potato casserole hot, garnished with fresh parsley.
