Blueberry Pound Cake

This is one of the most delicious and moist tender Blueberry 🫐 Pound Cakes Ever

Blueberry Pound Cake & Drizzle Icing

~~Ingredients ~~
**Cake
2 cups Blueberries, washed and dried completely (dry by laying on paper towels)
3 cups all purpose flour (seperate 1/4 cup to toss blueberries in. ) β€œmeasured correctly and good quality flour”
6 large eggs (room temperature)
2- 1/4 sticks plus 2 teaspoons Kerrygold unsalted pure butter, room temp (Do NOT use salted)
2-1/4 cups plus 1/4 cup Dixie Crystal extra fine sugar, seperated
1 teaspoon pure vanilla extract
1 teaspoon lemon extract, optional
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup whole milk

**Drizzle Icing
1- 1/2 cup confectioners sugar
2 teaspoons whole milk (can use lemon juice if you want lemon glaze)

Preheat oven to 325 degrees. Prepare your tube pan, take 2 teaspoons of butter and rub all areas of the tube pan inside real good. Spray with a small amount of bakers joy. Take 1/4 cup sugar and sprinkle it all over the inside of the pan, the bottom, sides and the inner tube really good. Do not pour out any sugar, use all of it and leave any extra in pan. It creates a great texture.
Cream butter and sugar sugar slowly until it is well blended and the color and texture has changer. Add the extracts, then add the eggs one at a time blending just until each egg is incorporated. Combine 2-3/4 cups flour, baking powder and salt. Slowly incorporate into your batter blending well. Add the milk and blend just until incorporate. Roll your blueberries in the reserved 1/4 cup flour, toss to coating well, but don’t bust your blueberries. Then pour the blueberry mixture, flour and all over into your batter and blend well with a spatula. Be careful not to burst your berries. (Batter will be thick, don’t fret) Pour mixture into prepared tube pan and bake 1 hour and 15 minutes. Let cool for 10 minutes in pan before you remove it. Place cake on serving plate. Cool completely before Icing.

**Drizzle Icing
Combine ingredients together to the consistency you prefer.

**Assemble
Drizzle icing over cooled cake. Garnish with blueberries, lemons and Strawberries is optional.

**Note
You can add or omit the lemon extract to the cake in addition to the vanilla extract for Blueberry Lemon Pound Cake.
