German Chocolate Cheesecake

Ingredients:

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar

- 3 large eggs
- 1 cup sour cream
- 1 cup German chocolate, chopped
- 1 cup evaporated milk
- 1 cup brown sugar, packed
- 3 large egg yolks
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 1/3 cups shredded sweetened coconut
- 1 cup chopped pecans

Directions:

1. Preheat oven to 325°F (163°C). Combine graham cracker crumbs and melted butter until evenly moistened. Press mixture firmly onto the bottom of a 9-inch springform pan to form the crust.
2. In a large bowl, beat cream cheese until smooth. Gradually add granulated sugar and vanilla extract, beating until creamy.
3. Add eggs one at a time, beating well after each addition. Blend in sour cream.
4. Pour half of the cream cheese mixture over the crust and bake for 25 minutes.
5. Meanwhile, in a medium saucepan, combine evaporated milk, brown sugar, egg yolks, butter, and vanilla extract. Cook over medium heat, stirring constantly until thickened and golden brown, about 10 minutes.
6. Remove from heat and stir in coconut and pecans. Set aside to cool slightly.
7. Remove the cheesecake from oven and spread the coconut-pecan mixture evenly over the partially baked layer.
8. Pour the remaining cream cheese mixture on top, smoothing the surface.
9. Bake for an additional 40-45 minutes or until the center is just set.
10. Cool cheesecake on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
