Pumpkin Pie Overnight Oats
Ingredients:
1/2 cup old-fashioned oats
1/2 cup milk (or almond milk)
1/4 cup pumpkin puree
1 tablespoon maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon vanilla extract
1 tablespoon chia seeds (optional)
Toppings: chopped pecans, cinnamon, or whipped cream
Directions:
In a mason jar or bowl, combine the oats, milk, pumpkin puree, maple syrup, cinnamon, nutmeg, vanilla extract, and chia seeds (if using).
Stir until well combined, then cover and refrigerate overnight.
In the morning, give the oats a good stir and add your desired toppings, such as chopped pecans or a sprinkle of cinnamon. Serve and enjoy!
