Ingredients
2 lbs baby potatoes or Yukon Gold potatoes, cut into chunks
3 tbsp olive oil
1 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)
1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)
4 cloves garlic, minced
1 tsp onion powder
1/2 tsp smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Directions
Preheat the Oven:
Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper or lightly grease it.
