🍭 Caramel Swirl Pops : Rich, Buttery, Swirled & Perfectly Lickable Homemade Caramel Candy on a Stick!
Ingredients:
(Makes about 12–15 lollipops)
- 1 cup granulated sugar
- 1/3 cup light corn syrup
- 1/4 cup water
- 1/4 cup sweetened condensed milk
- 2 tbsp unsalted butter
- 1/2 tsp vanilla extract
- Optional: pinch of sea salt
- Optional: a few drops of white or amber food colouring for swirls
- Lollipop sticks
- Candy thermometer
- Lollipop moulds or parchment paper

Directions:
Step 1: Prepare Your Moulds
1. Lightly grease silicone lollipop moulds or line a baking sheet with parchment paper.
2. Place lollipop sticks into moulds or lay them spaced on the tray.

Step 2: Cook the Caramel Candy
1. In a medium saucepan, combine sugar, corn syrup, water, and sweetened condensed milk.
2. Heat over medium, stirring constantly until sugar dissolves and mixture begins to boil.
3. Attach a candy thermometer and cook without stirring until it reaches 300°F (150°C) — the hard crack stage.
4. Remove from heat immediately and stir in butter, vanilla, and optional salt.

Step 3: Create the Swirl
1. Add optional white or caramel-coloured food colouring, then swirl briefly without fully mixing for a marble effect.
2. Pour mixture carefully into moulds or onto the parchment in circles around the sticks.

Step 4: Set the Pops
1. Let cool completely at room temperature (about 30–45 minutes).
2. Once hardened, gently remove from moulds or parchment.

Step 5: Wrap & Store
- Wrap individually in clear cellophane or candy wrappers.
- Store in a cool, dry place for up to 2 weeks.
