Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tbsp lemon zest (about 1 lemon)
2 tbsp fresh lemon juice
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
Glaze:
1 cup powdered sugar
1–2 tbsp fresh lemon juice
Extra lemon zest for garnish (optional)
Instructions:
1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
2. In a large bowl, cream the softened butter and sugar until light and fluffy, around 2–3 minutes.
3. Add the eggs one at a time, followed by the lemon zest, lemon juice, and vanilla extract. Mix until well blended.
4. In a separate bowl, combine the flour, baking soda, baking powder, and salt.
5. Slowly incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms. Avoid overmixing.
6. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, keeping them about 2 inches apart.
7. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
9. For the glaze, mix the powdered sugar and lemon juice until smooth, adjusting the lemon juice for your desired consistency.
10. Drizzle the glaze over the cooled cookies and garnish with extra lemon zest if you wish. Let the glaze set before serving or storing.
