Mediterranean Spiced Beef with Orzo Pasta
Aromatic Ground Beef in Mediterranean Herbs over Tender Orzo
Ingredients:
1 lb (450g) lean ground beef
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1/2 teaspoon cinnamon
1/4 teaspoon chili flakes (optional)
Salt and black pepper to taste
1/2 cup diced tomatoes (fresh or canned)
1/4 cup chopped parsley
1 tablespoon chopped fresh mint
1 cup orzo pasta
2 tablespoons crumbled feta cheese (optional)
Lemon wedges for serving
Directions:
Cook orzo pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until softened, about 4 minutes.
Add garlic and stir for 1 minute until fragrant.
Add ground beef and cook, breaking it up with a spatula, until browned and cooked through, about 8 minutes.
Stir in cumin, coriander, paprika, cinnamon, chili flakes, salt, and pepper. Cook for 2 minutes.
Add the diced tomatoes and simmer for another 3–4 minutes until slightly thickened.
Stir in the chopped parsley and mint, reserving a little for garnish.
Plate the cooked orzo and spoon the spiced beef over the top. Sprinkle with feta if using and garnish with fresh herbs. Serve with lemon wedges.
