Ingredients:
• 1 whole chicken
• 2 tablespoons herbs de Provence
• 2 potatoes, quartered
• 3 tbsp olive oil
• Salt and pepper

Instructions:
1. Preheat oven to 200°C (390°F).
2. Rub chicken with olive oil, herbs, salt, and pepper.
3. Place in a roasting pan with potatoes.
4. Roast for 1.5 hours, basting occasionally.
5. Let rest 10 minutes before carving. Serve with pan juices.
