Ingredients:
1 lb ground beef
2 tablespoons olive oil
1 red onion, sliced
3 cloves garlic, minced
1 zucchini, sliced
1 red bell pepper, sliced
1 cup cherry tomatoes, halved
1/4 cup Kalamata olives, sliced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
1/4 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
Juice of ½ lemon
Directions:
Brown the Beef: Warm the olive oil in a large skillet over medium heat. Add the ground beef and break it up with a spatula as it cooks. Once it starts to brown, season with cumin, smoked paprika, salt, and black pepper. Continue cooking until no pink remains, then push the beef to one side of the pan.
Sauté the Veggies: Add the red onion, zucchini, and red bell pepper to the open space in the skillet. Cook for about 5-7 minutes, stirring occasionally, until the veggies soften and start to caramelize.
Add Flavor Boosters: Mix the vegetables with the beef, then stir in the garlic, cherry tomatoes, and Kalamata olives. Let everything cook together for another 2-3 minutes until the tomatoes begin to burst and release their juices.
Brighten and Finish: Turn off the heat and squeeze in the lemon juice. Sprinkle the crumbled feta and chopped parsley over the skillet, and gently fold everything together so the flavors meld.
