Butter-Seared Lobster Tails over Creamy Mashed Potatoes 🦞🥔

📝 Ingredients:
2 lobster tails, split and cleaned
3 tbsp unsalted butter, divided
1 garlic clove, minced
1 tsp smoked paprika
Salt and black pepper, to taste
2 tbsp chopped fresh parsley (for garnish)
Mashed Potatoes:
4 medium Yukon gold potatoes, peeled and cubed
1/4 cup heavy cream (or milk)
2 tbsp butter
Salt and pepper, to taste
🍽️ Directions:
1️⃣ Make the Mashed Potatoes:
Boil potatoes in salted water until fork-tender, about 12–15 minutes. Drain, mash with butter and cream, and season to taste. Set aside and keep warm.
2️⃣ Prep the Lobster Tails:
Carefully slice lobster shells down the center and lift the meat slightly over the shell. Season with paprika, salt, and pepper.
3️⃣ Sear the Lobster:
Melt 2 tbsp butter in a skillet over medium heat. Add lobster tails, flesh side down. Sear 2–3 minutes per side, basting with butter and garlic until opaque and lightly golden.
4️⃣ Make Garlic Butter Drizzle:
In the same skillet, melt the remaining 1 tbsp butter with the minced garlic. Simmer 1 minute until fragrant.
5️⃣ Assemble & Garnish:
Spoon mashed potatoes into a shallow bowl. Top with lobster tails and drizzle with garlic butter. Sprinkle with fresh parsley.
