French Onion Meatloaf with Melted Swiss Cheese

Ingredients:

1 ½ lbs ground beef

1 packet dry French onion soup mix

1 cup breadcrumbs

2 eggs

1/2 cup milk

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1 tablespoon Worcestershire sauce

1 cup shredded Swiss cheese (divided)

1 tablespoon butter

1 large yellow onion, thinly sliced

1/2 teaspoon sugar

Fresh parsley, chopped (for garnish)

Directions:

Preheat oven to 375°F (190°C).

In a skillet over medium heat, melt butter. Add onions and sugar, cooking low and slow for 15–20 minutes, stirring occasionally, until golden and caramelized. Set aside.

In a large bowl, combine ground beef, dry French onion soup mix, breadcrumbs, eggs, milk, black pepper, garlic powder, Worcestershire sauce, and half of the shredded Swiss cheese. Mix until just combined.

Transfer the mixture into a greased loaf pan and form into a loaf shape.

Top the meatloaf with the caramelized onions and remaining Swiss cheese.

Bake for 45–55 minutes or until the internal temperature reaches 160°F (70°C).

Let rest for 10 minutes before slicing. Garnish with fresh parsley and serve.
