Ingredients:
For the Cake Base:
1 1/2 cups chocolate cookie crumbs
1/4 cup unsalted butter (melted)
For the Ice Cream Layers:
2 cups chocolate ice cream
2 cups vanilla ice cream
1/2 cup chocolate chips (mini)
1/2 cup caramel sauce (optional, for drizzling)
For the Whipped Cream Topping:
2 cups heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
For the Garnish:
Mini chocolate chips (for topping)
Instructions:
Prepare the Cake Crust:
In a bowl, mix the chocolate cookie crumbs with the melted butter until well combined.
Press the mixture into the bottom of a springform pan or a round cake pan to form a firm crust. Freeze the crust for at least 15-20 minutes while you prepare the ice cream layers.
Assemble the Ice Cream Layers:
Allow the chocolate and vanilla ice cream to soften slightly for easier spreading.
Spread a layer of chocolate ice cream on top of the chilled cookie crust, smoothing it out.
Follow with a layer of vanilla ice cream, smoothing it over the chocolate ice cream layer.
Sprinkle mini chocolate chips on top of the vanilla layer and lightly swirl them into the ice cream. If desired, drizzle some caramel sauce over the layers for added flavor.
Freeze the Cake:
Freeze the assembled cake for at least 3-4 hours or overnight until the ice cream layers are firm.
Make the Whipped Cream Topping:
In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Spread the whipped cream over the frozen cake, covering the top and sides.
Garnish the Cake:
Sprinkle mini chocolate chips over the whipped cream topping for extra crunch and decoration.
