ingredients:
1/2 cup (90g) chia seeds
2 cans (about 27 ounces / 800ml total) full-fat coconut milk
1/4 cup (60ml) maple syrup or agave nectar (adjust to taste)
2 tablespoons fresh lime juice (about 1-2 limes)
1 teaspoon lime zest
1 teaspoon vanilla extract
Pinch of salt
directions:
1. Combine ingredients: In a large bowl or pitcher, whisk together the chia seeds, full-fat coconut milk, maple syrup or agave nectar, fresh lime juice, lime zest, vanilla extract, and salt. Whisk thoroughly to ensure no chia seeds clump together.
2. Let sit: Let the mixture sit for 5-10 minutes, then whisk again vigorously to break up any clumps that may have formed.
3. Pour into dish: Pour the mixture into an 8x8 inch (20x20 cm) baking dish or a loaf pan lined with parchment paper for easy removal.
4. Chill: Cover the dish and refrigerate for at least 4 hours, or preferably overnight, until the pudding is completely set and firm.
5. Cut into bars: Once set, lift the parchment paper to remove the pudding from the dish. Place it on a cutting board and cut into bars or squares.
6. Serve: Serve chilled. Bars can be stored in an airtight container in the refrigerator for up to 3-4 days. These refreshing bars are perfect for a snack or light dessert.
