Warm Spiced Rhubarb Cobbler
Ingredients:
4 cups rhubarb, chopped
1 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1/4 cup milk
Vanilla ice cream (for serving, optional)
Directions:
1. Preheat the oven to 375°F (190°C).
2. In a large mixing bowl, combine the chopped rhubarb, granulated sugar, cornstarch, ground cinnamon, ground ginger, ground nutmeg, and lemon juice. Toss until the rhubarb is evenly coated.
3. Pour the rhubarb mixture into a greased 9x13-inch baking dish, spreading it out evenly.
4. In a separate bowl, mix together the flour, rolled oats, brown sugar, baking powder, and salt.
5. Pour the melted butter and milk into the dry ingredients, stirring until just combined. The mixture should be crumbly.
6. Spread the cobbler topping evenly over the rhubarb filling in the baking dish, covering it completely.
7. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the rhubarb filling is bubbling around the edges.
8. Remove from the oven and let cool for a few minutes before serving.
9. Serve warm, optionally with a scoop of vanilla ice cream.
