A perfect balance of sweet, salty, and crunchy, this mix is ideal for road trips, hiking, or a simple snack to keep you energized.
Ingredients:
1 bag of pecans (approx. 10 oz / 280 g) 🌰
1 bag of cashews (approx. 10 oz / 280 g) 🥜
1 bag of almonds (approx. 16 oz / 450 g) 🌰
1 bag of dried cranberries (approx. 6 oz / 170 g) 🍒
1/2 cup honey 🍯
6 tablespoons coconut oil 🥥
1 teaspoon vanilla extract 🌿
1 1/2 teaspoons cinnamon 🌟
Instructions:
1️⃣ Prepare the Liquid Mixture:
In a small saucepan, combine the honey and coconut oil.
Heat over medium heat, stirring until melted and well combined.
Remove from heat and mix in the vanilla extract and cinnamon.
2️⃣ Combine Dry Ingredients:
In a large mixing bowl, combine the pecans, cashews, almonds, and dried cranberries.
3️⃣ Coat the Nuts:
Pour the warm liquid mixture over the nuts and cranberries.
Stir thoroughly to ensure everything is evenly coated.
4️⃣ Bake:
Preheat your oven to 275°F (135°C).
Spread the coated mixture onto a baking sheet lined with parchment paper or a silicone baking mat.
Bake for 20–30 minutes, stirring every 10 minutes.
For a softer mix: Remove after 20–25 minutes.
For a crunchier mix: Bake the full 30 minutes.
5️⃣ Cool and Store:
Let the mixture cool completely on the baking sheet.
Once cooled, transfer to an airtight container for storage.
