Chocolate Orange Cheesecake Layer Cake
Ingredients:
For the Chocolate Cake:
1 3/4 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup buttermilk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the Orange Cheesecake:
16 ounces cream cheese, softened
1/2 cup granulated sugar
1 tablespoon orange zest
1/4 cup orange juice
2 eggs
For the Chocolate Ganache:
1 cup heavy cream
8 ounces semi-sweet chocolate, chopped
Directions:
Chocolate Cake:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.
Add eggs, buttermilk, oil, and vanilla. Beat until smooth. Stir in boiling water (batter will be thin).
Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and cool on a wire rack for 10 minutes; remove from pans and cool completely.
Orange Cheesecake:
In a mixing bowl, beat cream cheese, sugar, orange zest, and orange juice until smooth.
Add eggs, one at a time, beating well after each addition.
Pour cheesecake mixture over one cooled cake layer in a springform pan. Place the second cake layer on top.
Bake at 325°F for 25-30 minutes. Let cool and then refrigerate for at least 3 hours.
Chocolate Ganache:
Heat cream in a saucepan until it just begins to bubble. Remove from heat and pour over chopped chocolate.
Let stand for 5 minutes and then whisk until smooth.
Pour ganache over the chilled cheesecake layer cake and spread to cover. Refrigerate until set.
