🍍🍌 Hummingbird Bread 🍌🍍
A tropical twist with bananas, pineapple, and a hint of spice!
Ingredients:
- 3 ripe bananas, mashed
- 1 cup crushed pineapple, drained
- 1/2 cup unsweetened applesauce
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped pecans
- 1 teaspoon vanilla extract
Instructions:
1️⃣ Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
2️⃣ In a large bowl, mix mashed bananas, crushed pineapple, applesauce, and vegetable oil.
3️⃣ In another bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and nutmeg.
4️⃣ Gradually mix dry ingredients into the wet mixture until just combined.
5️⃣ Fold in chopped pecans and vanilla extract.
6️⃣ Pour batter into the loaf pan and spread evenly.
7️⃣ Bake for 60-70 minutes, until a toothpick comes out clean.
8️⃣ Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
