Wet Ingredients
Β½ cup unsalted butter (melted, cooled slightly)
4 large eggs (room temperature, separated)
Β½ cup erythritol or monk fruit sweetener
1 tsp vanilla extract
Β½ cup unsweetened almond milk

1. Prep the Pan
Preheat oven to 350Β°F (175Β°C).
Grease and line an 8-inch square cake pan with parchment paper.
2. Mix Dry Ingredients
In a bowl, whisk almond flour, coconut flour, baking powder, and salt.
3. Prepare Egg Yolks Mixture
In another bowl, whisk egg yolks with melted butter, sweetener, vanilla, and almond milk until smooth.
Add the dry ingredients and mix until combined.
4. Whip Egg Whites
In a separate clean bowl, beat egg whites with a pinch of salt until stiff peaks form.
Gently fold the egg whites into the batter to keep it airy and sponge-like.
5. Bake
Pour batter into the prepared square pan and smooth the top.
Bake for 25β30 minutes, or until a toothpick comes out clean.
Let cool completely before slicing.
