Coconut Herb Shrimp with Broccoli Orzo
Creamy Coconut Herb Shrimp Tossed with Broccoli Orzo
Ingredients:
400g shrimp, peeled and deveined
1 cup orzo pasta
2 cups broccoli florets
1 tablespoon olive oil
3 cloves garlic, minced
1/2 cup coconut milk
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 teaspoon lemon zest
1 tablespoon lemon juice
Salt and black pepper to taste
Red pepper flakes (optional, for heat)
Directions:
Cook orzo pasta according to package instructions until al dente. Drain and set aside.
Steam or lightly blanch broccoli florets until tender but still crisp. Set aside.
Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
Add shrimp to the skillet and cook for 2–3 minutes on each side until pink and opaque.
Reduce heat to low and stir in coconut milk, lemon zest, lemon juice, parsley, and dill. Cook for another 2 minutes, allowing the flavors to combine.
Gently fold in cooked orzo and broccoli. Toss everything together until well coated with the coconut herb sauce.
Season with salt, pepper, and red pepper flakes if using. Serve immediately.
