Homemade Hush Puppies
Ingredients:
- 1 box Jiffy Cornbread Mix
- 1/2 small onion, grated
- 1/2 cup buttermilk
- 1 large egg, beaten
- 1/4 cup panko bread crumbs
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp baking powder
- Oil, for frying
Directions:
1. In a large bowl, combine the Jiffy Cornbread Mix, grated onion, buttermilk, beaten egg, panko bread crumbs, flour, salt, black pepper, and baking powder. Stir until the mixture is well blended and forms a thick batter.
2. Heat oil in a deep fryer or large pot to 350°F (175°C).
3. Using a spoon or small ice cream scoop, carefully drop spoonfuls of batter into the hot oil, taking care not to overcrowd the pot.
4. Fry the hush puppies for about 2-3 minutes or until they are golden brown on all sides.
5. Remove the hush puppies with a slotted spoon and drain on paper towels.
6. Serve warm as a delicious side dish or snack.
