For the Mushroom & Scrambled Egg Toast:

1 slice rustic bread (sourdough or country loaf)

1 cup mushrooms, sliced

1 tsp butter or olive oil

2 eggs

Salt & pepper, to taste

Fresh parsley, chopped (for garnish)

For the Avocado, Tomato & Feta Toast:

1 slice rustic bread

½ avocado, sliced or mashed

5–6 cherry tomatoes, halved

2 tbsp feta cheese, crumbled

Salt & pepper, to taste

Fresh parsley, chopped (for garnish)

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
1️⃣ Prepare the Mushroom Toast
Heat butter or oil in a skillet over medium heat. Sauté mushrooms with a pinch of salt for 4–5 minutes until golden. In a separate pan, scramble eggs until soft and creamy. Toast bread, then layer with mushrooms and scrambled eggs. Garnish with parsley.

2️⃣ Prepare the Avocado Toast
Toast bread, then spread or layer avocado slices on top. Arrange cherry tomato halves over the avocado, sprinkle with feta cheese, and season with salt and pepper. Garnish with parsley.

3️⃣ Serve
Place both toasts on a plate for a colorful, satisfying breakfast spread.
