Crustless Coconut Pie
Ingredients:
- 1 cup shredded unsweetened coconut
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup heavy cream
- 1/2 cup coconut milk
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions:
1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with butter or non-stick spray.
2. In a medium bowl, whisk together the eggs, sugar, heavy cream, coconut milk, vanilla extract, and salt until smooth.
3. Stir in the shredded coconut and flour until fully combined.
4. Pour the mixture into the prepared pie dish.
5. Bake for 45-50 minutes, or until the pie is set and the top is lightly golden.
6. Allow the pie to cool completely before slicing and serving.
