Triple Chocolate Mousse Cake:

Ingredients:

For the chocolate cake:

1 cup all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup butter, softened

1 cup sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup milk

1/2 cup boiling water

1/2 cup dark chocolate, melted

For the chocolate mousse layers:

1. Dark Chocolate Mousse:

200g dark chocolate (70% cocoa)

1 cup heavy cream

2 tablespoons sugar

1 teaspoon vanilla extract

2 teaspoons gelatin powder

2 tablespoons water

2. Milk Chocolate Mousse:

200g milk chocolate

1 cup heavy cream

2 tablespoons sugar

2 teaspoons gelatin powder

2 tablespoons water

3. White Chocolate Mousse:

200g white chocolate

1 cup heavy cream

2 tablespoons sugar

2 teaspoons gelatin powder

2 tablespoons water

For decoration (optional):

Chocolate shavings

Cocoa powder

Fresh berries

Instructions:

For the chocolate cake:

1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan.

2. In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

3. In another bowl, beat the softened butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

4. Add the dry ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.

5. Pour in the melted dark chocolate and mix until smooth.

6. Gradually add the boiling water, stirring until the batter is smooth and liquidy.

7. Bake for about 30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely before using it.

For the mousse layers:

1. Dark Chocolate Mousse:

Melt the dark chocolate and set aside to cool slightly.

In a small bowl, dissolve the gelatin powder in the water and let it bloom for about 5 minutes. Then, gently heat until fully dissolved.

Whip the cream with the sugar until soft peaks form. Fold in the melted dark chocolate and gelatin mixture.

Pour the mousse over the cooled cake and refrigerate for 1-2 hours to set.

2. Milk Chocolate Mousse:

Repeat the same process as the dark chocolate mousse, using milk chocolate instead. Pour the milk chocolate mousse over the dark chocolate mousse layer and refrigerate again to set.

3. White Chocolate Mousse:

For the white chocolate mousse, repeat the same steps using white chocolate.

Once the white chocolate mousse is ready, pour it over the milk chocolate mousse layer and refrigerate for another 2-3 hours until the entire cake is set.

Decoration:

Once the mousse layers are set, you can decorate the cake with chocolate shavings, cocoa powder, and fresh berries.
