1 tsp sugar
1 tsp active dry yeast
1 tbsp olive oil

½ cup crushed San Marzano tomatoes
1 clove garlic, minced
Salt to taste
1½ cups fresh mozzarella, torn into pieces
½ cup cherry tomatoes, halved
Fresh basil leaves
Olive oil for drizzling
🔪 Instructions
Make the Dough (if homemade):
Mix warm water, sugar, and yeast. Let sit 10 minutes until foamy. Add flour and salt, mix, then knead until smooth. Cover and let rise 1 hour.
Prepare Sauce:
In a bowl, mix crushed tomatoes with garlic and a pinch of salt. No need to cook—keep it fresh and simple.
Preheat oven to 475°F (245°C):
Place a pizza stone or baking tray inside to heat.
Assemble Pizza:
Roll out dough into a rustic circle. Transfer to parchment. Spread tomato sauce over base, top with mozzarella, cherry tomatoes, and a drizzle of olive oil.
Bake:
Transfer pizza (on parchment) to hot tray/stone. Bake 10–12 minutes until the crust is puffed and charred in spots, and cheese is melted and bubbly.
Finish & Serve:
Scatter fresh basil on top. Slice and enjoy that gooey cheese stretch while it’s hot!
🍴 Tip: For that classic Neapolitan char, bake on a pizza stone and use high heat. Imperfections are part of the charm.
