Homemade Marshmallows
Ingredients:
3 tablespoons powdered gelatin
1 cup cold water, divided
2 cups granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
2 teaspoons vanilla extract
Powdered sugar, for dusting
Directions:
In a small bowl, sprinkle gelatin over 1/2 cup of cold water to soften for about 10 minutes.
In a medium saucepan, combine the remaining 1/2 cup water, granulated sugar, corn syrup, and salt. Place over medium-high heat, stirring until the sugar dissolves.
Once the sugar dissolves, increase the heat to high and cook the mixture without stirring until it reaches 240°F (115°C) on a candy thermometer, about 8-10 minutes.
Remove from heat and add the gelatin mixture, stirring until the gelatin is completely dissolved.
Transfer the mixture to the bowl of a stand mixer. Using the whisk attachment, beat on high speed until the mixture is thick, glossy, and has tripled in volume, about 10-15 minutes. Beat in the vanilla extract during the last minute of whipping.
Dust a 9x13 inch baking pan with powdered sugar. Pour the marshmallow mixture into the pan, smoothing the top with a spatula. Dust the top with more powdered sugar.
Let the marshmallows set, uncovered, at room temperature for at least 4 hours or overnight.
Once set, turn the marshmallows out onto a cutting board and cut into squares with a sharp knife or pizza cutter. Dust all sides of each marshmallow with powdered sugar to prevent sticking.
