Roasted Veggie & Halloumi Bowl
Ingredients:
1 cup chickpeas (cooked or canned)
1 cup sweet potato, cubed
1 cup broccoli florets
A handful of spinach
3 slices halloumi cheese
Olive oil, paprika, garlic powder, salt & pepper
Instructions:
1. Toss chickpeas, sweet potatoes, and broccoli with olive oil, paprika, garlic powder, salt & pepper.
2. Roast at 400°F (200°C) for 20–25 minutes.
3. Sauté spinach in a little olive oil until wilted.
4. Grill or pan-fry halloumi until golden.
5. Assemble everything in a bowl and serve warm!
