Lobster Tails and Seared Scallops
Ingredients:
For the Lobster Tails:
2 lobster tails (6-8 oz each)
3 tbsp unsalted butter, melted
2 garlic cloves, minced
1 tsp fresh lemon juice
1 tbsp fresh parsley, chopped
Salt and pepper to taste
1 tsp paprika (optional, for color)
For the Seared Scallops:
8-10 large sea scallops (fresh or thawed)
1 tbsp olive oil
2 tbsp unsalted butter
Salt and pepper to taste
1 tbsp fresh parsley, chopped (for garnish)
1/2 tsp lemon zest (optional)
Instructions:
Prepare the Lobster Tails:
Preheat your oven to 375°F (190°C).
Using kitchen shears, carefully cut through the top of the lobster shells, starting from the front and stopping near the tail. Pull apart the shell and expose the lobster meat, but leave it attached at the base.
Gently lift the lobster meat out of the shell and place it on top of the shell, resting it on top of the shell.
In a small bowl, mix melted butter, garlic, lemon juice, parsley, salt, pepper, and paprika.
Brush the lobster meat with the butter mixture and set the tails on a baking sheet.
Bake the lobster tails for 12-15 minutes or until the meat is opaque and firm. The lobster is done when it reaches an internal temperature of 140°F (60°C).
Prepare the Seared Scallops:
Pat the scallops dry with paper towels to ensure a good sear.
Heat olive oil in a large skillet over medium-high heat.
Season the scallops with salt and pepper on both sides.
Once the oil is hot and shimmering, add the scallops to the skillet, making sure they are not crowded.
Sear the scallops for 2-3 minutes per side, or until golden brown and caramelized. Do not overcook, as they will become rubbery.
Once seared, add butter to the pan and allow it to melt. Spoon the melted butter over the scallops for extra flavor.
Remove the scallops from the skillet and set aside.
Serve the Lobster and Scallops:
Place the lobster tails and seared scallops on a serving plate.
Garnish with fresh parsley and a little lemon zest if desired.
Drizzle any remaining melted butter from the pan over the scallops and lobster.
Serve immediately with a side of your favorite vegetables or a fresh salad.
