MINI CARAMEL APPLE CHEESECAKE BITES
Ingredients:
For the Crust:
1 cup graham cracker crumbs
2 tbsp brown sugar
1 tsp cinnamon
4 tbsp unsalted butter, melted
For the Cheesecake Filling:
16 oz (450g) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
¼ cup sour cream
For the Apple Topping:
2 small apples, peeled and diced
2 tbsp brown sugar
1 tsp cinnamon
1 tbsp butter
For Garnish:
Caramel sauce (store-bought or homemade)
Whipped cream (optional)
Extra cinnamon sugar for sprinkling

Instructions:
1. Preheat and Prep:
Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.
2. Make the Crust:
Mix graham crumbs, brown sugar, cinnamon, and melted butter until combined. Press 1–2 tablespoons into the bottom of each liner. Bake for 5 minutes, then set aside.
3. Make the Cheesecake Batter:
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing just until combined. Mix in vanilla and sour cream.
4. Fill and Bake:
Spoon cheesecake batter over the crusts, filling each about ¾ full.
Bake for 18–20 minutes or until the centers are just set. Cool completely, then refrigerate for at least 2 hours.
5. Make the Apple Topping:
In a skillet, melt butter. Add diced apples, brown sugar, and cinnamon. Cook for 3–4 minutes until softened but not mushy. Let cool.
6. Assemble:
Top each cheesecake bite with a spoonful of caramelized apples. Drizzle generously with caramel sauce. Add whipped cream and sprinkle with cinnamon sugar if desired.
