Ingredients:
For the cake:
¾ cup all-purpose flour
1 tsp baking powder
¼ tsp salt
4 large eggs
¾ cup granulated sugar
1 tbsp lemon zest
1 tsp vanilla extract
2 tbsp fresh lemon juice
Powdered sugar, for dusting the towel
For the filling:
1 cup heavy whipping cream
¼ cup powdered sugar
1 tsp vanilla extract
2 tbsp lemon curd (optional for extra lemon flavor)
For the lemon glaze:
½ cup powdered sugar
1–2 tbsp fresh lemon juice
Instructions:
1. Preheat the oven to 350°F (175°C). Prepare a 10x15-inch jelly roll pan with parchment paper and a light greasing.
2. In a small bowl, combine flour, baking powder, and salt.
3. In a larger mixing bowl, beat the eggs on high speed for 4–5 minutes until they are thick and pale. Gradually add in the sugar, lemon zest, vanilla, and lemon juice, mixing until fully incorporated.
4. Carefully fold in the dry ingredients until just combined. Pour the batter into the prepared pan and spread it out evenly.
5. Bake for 10–12 minutes, or until the cake bounces back when lightly pressed in the center.
6. Lay a clean kitchen towel on the counter and dust it generously with powdered sugar while the cake is baking.
7. Once the cake is finished, loosen the edges and turn it onto the towel. Remove the parchment paper, then carefully roll the cake up in the towel starting from a short end. Let it cool completely while rolled.
8. For the filling, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. If you like, fold in the lemon curd for more flavor.
9. Once the cake is cool, gently unroll it. Spread the whipped cream filling evenly across the cake, then re-roll it (without the towel).
