Ingredients:

2 cups corn kernels (fresh, frozen, or canned)
1/2 cup all-purpose flour
1/2 cup cornmeal

2 large eggs
1/4 cup milk
1/4 cup chopped green onions
1/4 cup chopped cilantro
1/2 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper to taste
1/4 cup vegetable oil (for frying)

For the Topping:

1/2 cup sour cream
1/4 cup mayonnaise
1 tbsp lime juice
1/4 cup crumbled Cotija cheese (or feta)
Chopped cilantro, for garnish
Chili powder, for garnish

Instructions:

Mix the Batter: In a large bowl, combine the corn kernels, all-purpose flour, cornmeal, baking powder, chopped green onions, chopped cilantro, ground cumin, smoked paprika, salt, and pepper. In a separate bowl, whisk together the eggs and milk. Pour the wet ingredients into the dry ingredients and mix until well combined.

Heat the Oil: Heat the vegetable oil in a large skillet over medium heat.
