Ingredients:
3 medium beets, peeled and sliced into 1/4-inch rounds
4 oz blue cheese, crumbled
1 large pear, sliced
1 tbsp butter
2 tbsp honey
1/4 cup pecans, toasted and chopped
Fresh thyme leaves, for garnish
Olive oil, for roasting
Salt and pepper, to taste
Instructions:
Roast the Beets:

Preheat oven to 400°F (200°C).
Place beet slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes or until tender. Allow to cool slightly.
Caramelize the Pears:

In a skillet over medium heat, melt the butter. Add pear slices and drizzle with honey.
Sauté for 3-4 minutes on each side, until golden and caramelized. Set aside.
Assemble the Stacks:

Place a beet slice on a serving plate, add a small amount of crumbled blue cheese, and top with a caramelized pear slice. Repeat layering to create 2-3 layers, ending with a beet slice on top.
Garnish and Serve:

Sprinkle toasted pecans and fresh thyme leaves over the stacks. Drizzle lightly with extra honey if desired.
