"This Fresh Pickled Cucumber Salad stays in the refrigerator for up to two months, but never lasts that long! It's better as it sits, and I love it as a snack. This will make 2 quarts.
Ingredients:
2 medium cucumbers, thinly sliced
1 medium onion, thinly sliced
1 cup white vinegar
1/2 cup water
2 tbsp sugar
1 tbsp salt
1 tsp black pepper
1/2 tsp mustard seeds (optional)
1/4 tsp red pepper flakes (optional)
Directions:
Place cucumbers and onions in a large bowl.
In a separate bowl, combine vinegar, water, sugar, salt, and pepper. Stir until sugar dissolves.
Pour the vinegar mixture over the cucumbers and onions, ensuring they're well covered.
Optional: Add mustard seeds and red pepper flakes for extra flavor.
Cover and refrigerate for at least 2 hours, but it’s even better if left overnight.
Store in the refrigerator for up to two months.
