- 1 can (13.5 oz) coconut milk
- 1 ½ cups heavy cream
- ¾ cup granulated sugar
- 4 large egg yolks
- ¼ cup cornstarch
- 1 teaspoon vanilla extract
- 1 ½ cups sweetened shredded coconut
- Pinch of salt

For the topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
- ¼ cup toasted coconut flakes (optional)

Instructions:
1. Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
2. For the crust: In a medium bowl, mix together the flour and sugar. Incorporate the cold, cubed butter until the mixture looks like coarse crumbs.
3. Stir in the egg yolk and mix until the dough forms. If it seems too dry, add 1-2 tablespoons of ice water, one at a time.
4. Evenly press the dough into the bottom of the prepared pan. Bake for 12-15 minutes or until golden brown. Remove and let cool.
5. For the filling: In a medium saucepan, whisk the coconut milk, heavy cream, and sugar together, bringing it to a simmer over medium heat.
6. In another bowl, combine the egg yolks, cornstarch, and salt until smooth. Gradually whisk in about ½ cup of the hot coconut mixture to temper the eggs.
7. Slowly whisk the egg mixture back into the saucepan with the remaining coconut mix. Cook over medium heat, whisking constantly, until thickened (about 3-5 minutes).
8. Remove from heat and stir in the vanilla extract and shredded coconut. Pour the filling onto the cooled crust, spreading evenly.
9. Refrigerate the bars for at least 4 hours or overnight until the filling has fully set.
10. For the topping: In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
11. Spread the whipped cream over the set coconut mixture and top with toasted coconut flakes, if desired.
