Cod & Potatoes in Rosemary Cream Sauce
4 cod fillets (about 6 oz each)
2 medium potatoes, peeled and diced
1 cup heavy cream
2 tablespoons butter
2 teaspoons fresh rosemary, chopped
1 clove garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
INSTRUCTIONS
Heat olive oil in a skillet and cook potatoes until golden and tender.
Remove potatoes and set aside.
In the same skillet, melt butter, sauté garlic, and rosemary.
Add heavy cream and simmer to thicken.
Season cod fillets with salt and pepper, cook in the rosemary cream sauce until flaky.
Serve cod fillets with potatoes and cream sauce.
