Green Goddess Smoothie Bowl
Ingredients:
1 cup frozen mango chunks
1 cup frozen spinach
1/2 cup unsweetened almond milk (or milk of choice)
1/4 cup plain Greek yogurt (or coconut yogurt for vegan option)
1 tablespoon chia seeds
1 tablespoon honey or maple syrup (adjust to taste)
1/2 teaspoon vanilla extract
Pinch of sea salt
Toppings:
1/4 cup fresh spinach leaves
1/4 cup sliced strawberries
1/4 cup blueberries
1 tablespoon shredded coconut
1 tablespoon chopped almonds or pecans
1/2 avocado, sliced
Instructions:
1. Combine frozen mango, frozen spinach, almond milk, Greek yogurt, chia seeds, honey (or maple syrup), vanilla extract, and salt in a high-powered blender.
2. Blend until completely smooth and creamy, adding a little more almond milk if needed to reach desired consistency. If using a less powerful blender, you may need to blend in stages, starting with the liquid ingredients and gradually adding the frozen fruit and spinach.
3. Pour the smoothie mixture into a bowl.
4. Arrange your desired toppings attractively on top of the smoothie base. This might include the fresh spinach leaves, sliced strawberries, blueberries, shredded coconut, chopped nuts, and avocado slices. Feel free to get creative with your arrangement!
