This recipe creates elegant smoked salmon croquettes, served with a refreshing dill cream sauce. Perfect as an appetizer or light meal!

Ingredients:

100g smoked salmon, finely chopped
100g cream cheese, softened
50g grated Parmesan cheese
1 large egg, lightly beaten
2 tablespoons fresh dill, finely chopped
1 tablespoon lemon juice
1/4 cup breadcrumbs
Salt and freshly ground black pepper to taste
2 tablespoons olive oil, for frying
For the Dill Cream:
100ml double cream
1 tablespoon fresh dill, finely chopped
1 tablespoon lemon juice
Salt and freshly ground black pepper to taste

Instructions:

1. In a medium bowl, gently combine the chopped smoked salmon, softened cream cheese, Parmesan cheese, beaten egg, 2 tablespoons of fresh dill, and lemon juice. Season generously with salt and pepper. Mix until everything is well incorporated but be careful not to overmix.
2. Using your hands, form the mixture into small, oval-shaped croquettes. You should get approximately 8-10 croquettes, depending on size.
3. Place the breadcrumbs on a plate. Carefully roll each croquette in the breadcrumbs, ensuring they are fully coated.
4. Heat the olive oil in a large frying pan over medium heat. Once the oil is hot, carefully place the croquettes in the pan, ensuring not to overcrowd.
5. Fry the croquettes for about 2-3 minutes per side, or until they are golden brown and heated through. Remove from the pan and place on a plate lined with paper towels to absorb any excess oil.
6. While the croquettes are frying, prepare the dill cream. In a small bowl, whisk together the double cream, 1 tablespoon of fresh dill, and lemon juice. Season with salt and pepper to taste. You can also add a pinch of garlic powder for extra flavor.
