A playful and elegant combo of crispiness and velvety avocado, plated with finesse on a pool of roasted pepper coulis and drops of balsamic magic 🖤✨
🛒 Ingredients & Quantities:
🥑 Ripe avocado – 1, mashed with lime and salt
🍞 Panko breadcrumbs – 1/2 cup
🧀 Cream cheese – 3 tbsp (whipped)
🧂 Salt & pepper – to taste
🌶️ Roasted yellow pepper – 1 (for the coulis)
🍅 Cherry tomato – 1 (for garnish)
🍠 Croquette filling – 1 small potato, mashed with seasoning
🧈 Butter – 1 tbsp
🌿 Dill, microgreens – for garnish
👨🍳 Preparation:
1️⃣ Make the croquette: Shape seasoned potato into a log, coat in panko, and fry till golden.
2️⃣ Fry the avocado fritter: Shape mashed avocado into discs, bread and fry.
3️⃣ Prepare the coulis: Blend roasted pepper with a dash of olive oil and salt until smooth.
4️⃣ Plate with finesse: Spread coulis on the plate, top with avocado base, cream cheese swirl, microgreens, and place croquette + tomato on the side. Finish with balsamic dots.
