Ingredients:
1 lb thinly sliced roast beef (deli-style or cooked steak slices)
1 tablespoon olive oil
1 green bell pepper, thinly sliced
1 small yellow onion, thinly sliced
1/2 cup mushrooms, sliced (optional)
4 oz cream cheese, softened
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
6–8 slices provolone cheese
Instructions:
Heat olive oil in a skillet over medium heat. Add the bell pepper, onion, and optional mushrooms, and sauté for 5–7 minutes until they are tender and slightly caramelized. Remove from heat and set aside.
In a small bowl, combine the softened cream cheese with garlic powder and black pepper, mixing until smooth.
Lay out the roast beef slices on a flat surface and spread a thin layer of the cream cheese mixture on each slice.
Top each slice with a spoonful of the sautéed vegetables and half a slice of provolone cheese.
Roll each slice tightly into a roll-up and place them seam-side down in a baking dish.
Bake at 375°F (190°C) for 10–12 minutes, or until the cheese is melted and everything is heated through.
