Chicken Sausages with Zucchini, Tomatoes, and Pasta
Ingredients:
1 tsp olive oil
12 oz Italian-style chicken sausages, sliced
1 cup diced onion
1/2 tsp salt
2 tsp minced garlic
½ tsp crushed red pepper (optional)
4 cups chicken broth
8 oz Radiatore pasta (or any small pasta)
2 cups chopped zucchini
2 tbsp lemon juice
1½ cup grated Parmesan cheese, divided
1 cup halved grape tomatoes
1/3 cup chopped fresh basil
Directions:
Heat the olive oil in a large skillet over medium-high heat. Add the sliced chicken sausages and cook for about 5 minutes, or until browned and cooked through. Remove the sausages from the skillet and set aside.
In the same skillet, add the diced onion and salt. Cook for about 3–4 minutes, stirring occasionally, until the onion becomes translucent.
Add the minced garlic and crushed red pepper (if using), and sauté for another 30 seconds, until fragrant.
Pour in the chicken broth and bring to a boil. Once boiling, stir in the pasta and cook according to the package instructions, about 9–10 minutes, until the pasta is al dente.
When the pasta is almost done, add the chopped zucchini and cook for an additional 2–3 minutes, until the zucchini softens slightly.
Stir in the lemon juice, 1 cup of Parmesan cheese, halved grape tomatoes, and cooked chicken sausages. Continue cooking for another 1–2 minutes until everything is well combined and heated through.
Remove from heat and sprinkle with the remaining ½ cup of grated Parmesan cheese and fresh chopped basil.
Serve warm, and enjoy!
