Pan-Seared Salmon with Creamy Mushroom Spinach Sauce
Ingredients:
2 salmon fillets
Salt & black pepper, to taste
1 tbsp olive oil
1 tbsp butter
1 cup mushrooms (sliced)
2 cups fresh spinach
1/2 cup heavy cream
1/4 cup chicken or vegetable broth
1 garlic clove (minced)
1 tsp chopped chives or parsley
Instructions:
1. Sear Salmon: Season salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook salmon, skin-side down first, 4-5 minutes per side until golden. Remove and set aside.
2. Make Sauce: In the same pan, melt butter. Sauté mushrooms and garlic for 2-3 minutes. Add spinach and cook until wilted.
3. Creamy Base: Pour in cream and broth. Simmer until slightly thickened, about 3–5 minutes. Stir in chives.
4. Serve: Plate salmon over the mushroom-spinach sauce. Spoon extra sauce on top.
