Cajun Chicken Sloppy Joes

Ingredients:

1 lb ground chicken

1 tbsp olive oil

1/2 cup bell pepper, diced

1/2 cup onion, diced

2 cloves garlic, minced

1/2 cup tomato sauce

1 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 ½ tsp Cajun seasoning (store-bought or homemade)

Salt and pepper to taste

4 hamburger buns, toasted

1/4 cup green onions, chopped (for garnish)

Optional toppings: sliced pickles, cheese, coleslaw

Directions:

Heat olive oil in a skillet over medium heat. Add diced onions and bell peppers; sauté for 3–4 minutes until softened.

Add garlic and cook for 30 seconds until fragrant.

Stir in ground chicken, breaking it apart as it cooks. Cook until browned and fully cooked through.

Add tomato sauce, tomato paste, Worcestershire sauce, Dijon mustard, and Cajun seasoning. Stir until combined.

Simmer the mixture for 5–7 minutes until thickened. Taste and adjust seasoning with salt and pepper as needed.

Spoon the Cajun chicken mixture onto toasted buns and top with green onions and any optional toppings.

Serve hot and enjoy with chips, fries, or a cool coleslaw.
