Ingredients:
1 lb shrimp, peeled & deveined
2 tbsp butter
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 stalk celery, chopped
1 tsp Cajun seasoning
2 tbsp flour
2 cups seafood or chicken stock
2 cups whole kernel corn (fresh or frozen)
1 cup heavy cream
Salt & pepper to taste
Green onions & parsley, for garnish
Directions:
In a large pot, melt butter and oil. Sauté onion, garlic, bell pepper, and celery until tender.
Stir in flour and cook for 1 minute. Gradually whisk in stock until smooth.
Add corn, cream, Cajun seasoning, salt, and pepper. Simmer for 10 minutes.
Add shrimp and cook until pink and cooked through (about 3–4 minutes).
Garnish with chopped green onions and parsley before serving.
