Pumpkin spice cake with sweet creme
1/4 cup flax seed meal
3 tablespoons canned pumpkin ( the one without sugar. )
1/2 teaspoon baking powder
Two tablespoons sweetener
I teaspoon of vanilla
One egg
One tablespoon of butter or coconut oil
One teaspoon of pumpkin pie spice
Pecans cut small and the amount is up to you. ( optional)
You mix the dry ingredients then mix the wet and blend both together. Add the nuts and mix well. Put in ramekin and cook for one min in the microwave then check …cook for 30 seconds more if not dry to the touch. Ovens vary so adjust as needed .
Topping
HWC and sweetener with a lil vanilla …hand whip till thick and pour over the top. Fruit is optional but I liked the contrast
