👵 Grandma’s Favorite: Frankfurter Kranz with 100% Addictive Factor!
🍰 Ingredients (for a 20 cm cake ring/tube pan):
1 lemon

200 g flour

200 g sugar

8 egg yolks

½ packet baking powder

30 g semolina

7 g cornstarch

700 ml milk

4 egg whites

Pinch of salt

1 tsp instant coffee

30 g powdered sugar

2 tbsp brandy

Caramelized sugar for garnish (or store-bought brittle)

Butter and breadcrumbs for greasing the pan

💡 Bonus idea: Also try a refreshing lemon cake with meringue – bakes in just 7 minutes!

🧑‍🍳 Instructions:
1️⃣ Prep the lemon
Wash and dry the lemon. Grate the zest and juice half of the lemon.

2️⃣ Make the cake batter
Cream the butter until fluffy. Add 100 g sugar, 4 egg yolks, lemon juice, and zest.
Mix in the flour, baking powder, semolina, 30 g cornstarch, and 200 ml milk until smooth.

3️⃣ Bake the cake
Preheat the oven to 200°C (392°F).
Grease your baking tin with butter and sprinkle with breadcrumbs.
Beat the egg whites with a pinch of salt until stiff, then fold into the batter.
Pour into the prepared tin and bake for 45 minutes.

4️⃣ Let it rest
After baking, turn the cake out onto a wire rack.
Let it rest for 12 hours or overnight – this improves the texture and flavor.

🎂 For the filling:
Bring 500 ml milk, instant coffee, and 100 g sugar to a boil.

Stir in 4 egg yolks and 40 g cornstarch, cook for 1 minute, stirring constantly.

Let the cream cool completely.

In a separate bowl:

Beat 300 g butter and 30 g powdered sugar until fluffy.

Gradually mix in the cooled custard and brandy.

🧁 Assemble the cake:
Cut the cake horizontally into 3 layers.

Use two-thirds of the buttercream to fill between the layers.

Use the remaining cream to cover and decorate the outside of the cake.

Garnish generously with caramelized sugar or nut brittle.

This cake gets even better after a day – the flavors develop beautifully. Perfect for special occasions or Sunday coffee tables.
